Easter holiday with outdoor activities! These scones with nuts and dried fruit tastes really good and you can actually enjoy them as is, or you can add a little butter and/or jam to it. Great to bring out on trips. Enjoy!
Dough (gives about 15 pcs. 6 cm big scones):
100 gr butter
3 dl whole meal flour
1 dl sugar
5 dl plain flour
1 1/2 tsp. baking powder
2 1/2 dl yoghurt natural
2 1/2 dl milk
100 gr hazelnuts
150 gr dried fruit as e.g. raisins and apricots (and even better when mixing more than one type)
Cest from 1/2 lemon
Cest from 1/2 orange
Heat nuts on low heat (this will bring out a lot of flavor to the nuts). Cool down and chop roughly (save some to sprinkle on top).
Crumble butter into the plain flour, add whole meal flour, baking powder, salt and sugar and mix. Add nuts, fruit, cests and milk/yoghurt and stir until even dough.
Roll out (or use your hands) dough until 2 cm thick size. Shape in circles the size you prefer.
Brush each one on top with a mixture of egg/milk, sprinkle with rest of the nuts and bake in pre-heated oven to 200 °C for approx. 15-20 min. Take out from oven when golden brown.
