Small, soft and delicate madeleine’s cookies are perfect for afternoon tea. I make these now and then, they’re very easy to make and I love the softness and of course the shape of them. This recipe gives about 24 madeleine’s, but today I made fewer and put in some minies! They taste of course best when just baked and still lukewarm.
100 gr sugar
100 gr plain flour
1 orange juice and zest
3/4 tsp. baking powder
100 gr butter
Whip eggs and sugar until light and fluffy. Sift in flour and baking powder. Add orange juice and zest and butter at the end. Use a spatula to keep the batter light and fluffy. Let the batter rest for about 20-30 min.
Grease the molds with melted butter and dust with flour. Add batter into each “shell”.
Bake in pre-heated oven 200 degree C for about 20 min. Remove when golden brown.
