My sister use to make these and put in the freezer so she can just heat them in the oven for afternoon tea, they are really soft and moist – delicious! Even if they are named “Fruit muffins”, we managed to put some chocolate in them as well. Use your fantasy and add nuts and dried fruit as you like! I got this recipe from her in 1999 – still good for tea or coffee. Enjoy!
125 gr butter
5 dl flour
2 tsp. baking powder
1 tsp. vanilla sugar
2 dl sugar
3,5 dl raisins, hazelnuts, chocolate
2 dl milk
Crumble butter in flour, add sugar, vanilla sugar, baking powder and nuts/raisins.
Whisk egg and milk slightly and add to the flour mix. Stir until evenly mixed.
Pour into muffin cups, about 3/4 full, (I get 15 small out of this batter) and bake in pre-heated oven at 200°C for 15 min. Take from oven when golden brown. Just make sure not to overcook because they will get very dry.
