Home made energy bars are perfect to bring for outdoor activities. You know exactly what the content is, and you can mix nuts/seeds and dried fruit to make your own favourite. I
200 gr syrup light color type
200 gr cream
100 gr pistachio nuts
100 gr almonds
200 gr cranberries
50 gr sesame seeds
50 gr sunflower seeds
200 gr chocolate (40%) for dipping
Roughly chop the nuts and almonds and heat in the oven at 200 °C for about 10 min. Watch carefully so they don’t burn.
Boil cream and syrup until golden brown. I use a thermometer and boil until 118 °C, if temperature gets higher, it becomes caramel and we don’t want that.
Add nuts/seeds into the cream/syrup mixture and stir well. Spread into a tin approx. 25 x 20 cm covered with greased paper. Let the mix set before cutting into bars the size you prefer.
Melt chocolate in a bowl over boiling water (make sure the bowl doesn’t come in contact with the boiling water, the chocolate will burn). Dip the bars in the chocolate and place on a tray covered with greased paper. Cool down and wrap each one in greased paper.

Tip: Add a couple of tea spoons of delfia butter to make the chocolate a little more runny since dipping will be more easy.
