Cinnamon buns


This is a recipe I got in 6th grade at school from our teacher Solvor in baking. I use this recipe for whatever I make with sweet dough, it’s a winner! In our family the favorite buns are filled with butter, cinnamon, sugar, raisins and chopped almond. Today my nephew and I made buns filled with butter, cinnamon and sugar – they were very light and airy – delicious!! I hope you will enjoy this recipe as much as I have done for decades!


1 l flour
1 dl sugar
1/2 tsp. cardamom
100 gr butter
50 gr yeast
4 dl milk


150 gr butter
4 tbsp. sugar
2 tbsp. cinnamon

Crumble butter into flour, add sugar and cardamom. Heat the milk until lukewarm and add yeast, stir until resolved. Add milk/yeast into the flour and mix well. If you use dry yeast, add into flour and then add milk. Raise for 1 hour.

Roll the dough to approx. 50 x 30 cm, 1 cm thick. Spread butter/sugar/cinnamon mix on top and roll together, tight and firm. Cut into 3 cm thick buns and place it on greaseproof paper tray and raise for another 30 min.

Bake in pre-heated oven to 220 °C for 12-15 min. Take out from oven when golden brown.
