This is a very traditional cake which has been made in my family for decades. My mother used to make it when we were going with the swimming team, school music, different social gatherings – not formal ones, football tournaments etc. I’ve made this mostly in job context, and I think I can say that this cake has saved many projects I’ve had during my career. It’s nice to bring a cake to office and serve in meetings, it creates a good atmosphere which I believe is one of the most important things because relations are built and interest established. So this one is not only for birthday parties, bring it to office as well! Enjoy!
6 dl sugar
7,5 dl plain flour
4 tsp. baking powder
3 tbsp. cocoa
3 dl milk
300 gr butter
Melt butter and cool down a little.
Whip eggs and sugar until light and fluffy mixture. This is the success factor no 1 to achieve a light and airy cake! I use a kitchen machine for this job.
Mix all dry ingredients and sift alternately with milk into the egg/sugar mix. Use a spatula to avoid all the air in the egg/sugar mix to disappear, you will only end up with a compact and not that good cake.
Add the melted butter at the end. Pour into the deep baking tray for your oven, covered with grease proof paper.
Bake in preheated oven to 175 °C for approx. 30 min.
300 gr icing sugar
6 tbsp. already made coffee (cooled down)
3 tsp. vanilla sugar
1 1/2 tbsp. cocoa
6 tbsp. room temperature butter
Mix everything well and spread on the cake when nearly cooled down.
