Blueberry pie

A lukewarm blueberry pie is perfect for afternoon tea, and when berry season is just finished, some of the blueberries were used for a pie. You can just as well use frozen ones, the result is just as good! Serve with a smooth custard and you’re in blueberry heaven! Enjoy!

This recipe serves 6 people.

400 gr blueberries
1 dl sugar
1 tbsp. corn flour

Batter:

2 eggs
1 dl sugar
1/2 dl plain flour
1 tsp. baking powder
1 tsp. vanilla sugar
1/2 dl milk
chopped almonds

Pour blueberries into an ovenproof tin and mix slightly with sugar and corn flour.

Whip eggs and sugar to a fluffy mix. Mix all dry ingredients and sift into egg/sugar mix together with milk.

Pour batter on top of blueberries and sprinkle chopped almonds on top.

Bake in pre-heated oven 180 deg C in the middle for 45-60 min.

Serve with custard. Enjoy!
