I make these donuts every Christmas and I always use my aunt Guri’s recipe since they are crispy and delicious. The recipe covers a hole block, so you can for sure divide it (the whole thing does not fit into my Kitchen aid bowl…)! Enjoy!
500 gr sugar
3 dl double cream
6 dl sour cream
3 tsp. bicarbonate
4 tsp. cardamom
1,3 kg plain flour
1,5 kg lard for frying
Mix egg and sugar until light and fluffy. Whip cream until almost stiff and mix in sour cream. Mix both together until even. Mix dry ingredients and stir into egg/cream mix. As already mentioned, this is a huge portion which does not fit into my Kitchen Aid, so you have to consider using a separate big bowl when adding it all together.
Roll out the dough bit by bit, about 5mm thick, and use a donut cutter to cut out all pieces.
Warm the lard until ready for frying (put a wooden spoon or similar to the bottom of the pan and if it starts fizzing, then it’s ready). Be always aware when frying – keep the lid close in case of fire.
Fry and let cool down on paper (to remove all oil).
