My mother used this recipe for many many years for making apple cake, and I say never change a winning recipe! Now it’s season for Norwegian apples so no reason not to use them wisely! It’s a very simple recipe – the only time consuming element is peeling the apples…. Serve with vanilla custard or ice cream – delicious!
Batter:
100 gr butter melted
2 eggs
2,5 dl sugar
1 dl full fat milk or cream
3 dl plain flour
2 tsp. baking powder
4 apples
sugar and cinnamon
Whip eggs and sugar until light and fluffy. Mix flour and baking powder and sift into eggmix. Pour in milk/cream and stir carefully. Add melted butter and stir again.
Peel the apples and cut into slices (2-3 mm). Mix sugar and cinnamon and cover all slices.
Pour into a round baking tin – 22 cm. Place all apple slices (or as many you think is suitable – depends on size of apples). No worries if the apple slices are not covered entirely by the batter, it’s just an advantage, because batter will rise.
Bake in pre-heated oven at 200 deg C for about 40-45 min. If the top is getting dark, place a greaseproof paper on top of the tin. Remove when cake slips the edge of the tin.
